Mix together your dry ingredients well (oats and protein powder).
Add in your peanut butter and honey to the dry ingredients using a blending fork.
Firmly press half of the mixture into your parchment-lined 9x9 pan.
In a medium saucepan over low-medium heat, melt together your chocolate and coconut oil until fully melted. Remove from heat and immediately pour on top of your oat layer.
Cover with plastic wrap and place in the refrigerator for at least 4 hours or overnight to set.
Cut into 8 bars for serving.

These no bake peanut butter & dark chocolate bars should be stored in an airtight container in the refrigerator for up to 5 days.
