If you crave simple, healthy snacks on a budget you’ll love this recipe!

What ingredients do I need to make No-bake Peanut Butter and Jelly Bars?
You’ll only need 5 simple ingredients that are likely already in your kitchen! We purchase most of these ingredients from Sam’s Club to save on costs.
- Peanut Butter
- Honey (we like to use organic raw honey, sometimes from a local source)
- Old Fashioned Rolled Oats (we like the Bob’s Red Mill Organic)
- Vanilla Protein Powder (use your favorite kind)
- Your Favorite Jam (I used red raspberry, but strawberry, grape or blackberry would also be delicious!)

Helpful Supplies
- Large mixing bowl (I use a large glass pyrex bowl)
- Stainless steel blending fork (It really helps get the peanut butter and honey mixed in well with the dry ingredients)
- 8×8 baking dish (I prefer glass)
- Adjustable measuring cup (this is awesome for measuring the peanut butter or honey – no scraping!)
- Parchment paper (to more easily remove the bars from the dish)
- Plastic wrap (to cover the bars while they set in the fridge)
What if I don’t have protein powder?
For this recipe, you could omit the protein powder if you don’t have any on hand. However, if you do this, I would recommend blending up additional oats in a food processor (about one cup) to add more bulk to the dry ingredients. If you don’t, you’ll end up with really sticky bars that may not set correctly.
How do I make peanut butter and jelly bars?
First, mix together your dry ingredients well (oats and protein powder) like the image below.

After you have mixed your dry ingredients, add in your peanut butter and honey. Use a blending fork for easy mixing.

Once the ingredients are well mixed, press half of the mixture into your parchment-lined 9×9 pan.

Add your favorite fruit jam on top of the first layer.

Top with the remaining half of your mixture. Cover with plastic wrap and place in the fridge for at least 4 hours before cutting into bars.

Tips For Keeping the Jelly From Coming Out of the Top Oat Layer
There are a couple of different ways you can master adding the top layer:
- With clean hands, grab about a quarter of the mixture at a time a flatten it out into a square shape (doesn’t have to be perfect!) before placing on top of the jelly layer. Continue to do this until you’ve covered the entire jelly layer.
- Alternatively, if you have a second 9X9 pan that you can line with parchment paper, you could press the top layer into that and then remove and lay on top of the jelly layer.
You’ll also want to make sure that you are using the correct size pan. If it’s too large, the mixture will either not spread far enough to the edges or if you do manage to spread them out far enough, they will be thin and made not hold up as expected.
Storing the Peanut Butter and Jelly Bars
Keep the bars stored in the fridge in an air-tight container for up to 5 days.
