Essentially mini baked Mississippi Sloppy Joes that are perfect for tailgate parties, potlucks, or just an easy and tasty dinner idea!

What ingredients do I need to make Easy Mississippi Sliders?

For this recipe, you’ll need the following ingredients:

  • Hawaiian Rolls – I usually buy the King’s Hawaiian Brand, but you can also make your own if you’d like this recipe to be totally from scratch! This is a great Hawaiian Roll Recipe and if you are a sourdough fanatic, this is a great sourdough recipe for hawaiian rolls!
  • Ground Beef – I’d opt for a leaner ground beef so you have less fat to drain after browning the meat. We purchase half a cow for our family each year. I highly recommend connecting with a local farmer if you can! The quality of the meat is unmatched, and it’s great to know we always have meat available.
  • Au Jus Packet – For simplicity’s sake, I used an Au Jus gravy packet, but you can make your own!
  • Pepperoncinis – I always grab the Mezzetta brand. You’ll also use some brine from the jar in this recipe.
  • Smoked Gouda – While you have freedom to experiment with the cheese used in this recipe, I recommend a high-quality smoked gouda. Even better when you shred yourself! The smoked flavor paired with the classic Mississippi Roast flavors is the perfect pairing!
  • Butter – You’ll need butter (salted recommended) for the delicious slider topping a little more to grease the baking dish (or you can use your favorite non-stick spray to prep the baking dish).
  • Dill Weed, Garlic Powder, and Onion Powder: Rather than use a pre-made ranch seasoning, I opted to make my own seasoning mix for the topping with dill weed, garlic powder and onion powder – all staples for a yummy ranch flavor!

Helpful Supplies For Mississippi Sliders

This recipe is quite simple and doesn’t require a lot of equipment. You should have everything you need already, but I’ll include a list below for reference.

  • Stainless Steel Skillet OR Well-Seasoned Cast Iron Skillet – I personally use Cuisinart Stainless Steel or Cast Iron in my kitchen. I’ve been using both since we’ve been married and they have held up so well!
  • A spatula or ground beef chopper – For cooking the beef mixture. I love the ground beef tool, but a spatula works well and works great for serving the sliders once they’re ready to eat!
  • A 13 ” x 9″ pan – If you are taking these sliders to a potluck or tailgate party, you may opt for a simple foil pan that can just be thrown away. But if you’re wanting to avoid foil, I really like this Pyrex glass pan since it comes with a lid and is easy to travel with! I’d also recommend a carrying case for it, which is so helpful to keep things hot!
  • Grater – If you opt to use a high-quality cheese from the block over slices like I did, you’ll need a grater if you don’t already have one. I’ve been using a simple grater for many years. Eventually, I plan to upgrade to a rotary grater because I shred our own cheese all the time. It’s quite the arm workout!
  • Measuring Spoons – You’ll need these to measure the seasonings for the butter topping. I’ve been using this set of measuring spoons and cups from OXO for many years and I love that they are magnetic!
  • Bread Knife – For slicing the Hawaiian rolls in half – another purchase that we’ve gotten great use of! We purchased it over 5 years ago and it’s still sharp as ever!
  • Aluminum foil – For covering the sliders during baking.

Frequently Asked Questions + Substitutions

Below are some common questions and substitution options for this slider recipe.

While I will always recommend a high quality cheese that you cut or grate yourself, you can also use pre-cut slices or bagged shredded cheese. If you need to be dairy-free, you could even omit the cheese or use your favorite dairy-free cheese substitution!

I respect if you want to omit the premade packet on this! As I mentioned above, there are recipes out there where you can easily create your own mix. I don’t personally use this seasoning much, so I opted for the packet to make it easier. But feel free to use this recipe I found or another. If you do, let me know in the comments how it turned out!

If you don’t have dill weed handy, or quite frankly, you just don’t feel like measuring the seasonings, you could use premade ranch seasoning. However, I wouldn’t use the entire packet. I’d recommend doing maybe a tablespoon to start. You don’t want the flavor to be too overpowering! These sliders are already really flavorful!

If you’re planning to take these to a potluck or tailgate party, I’d recommend baking them in a throw away foil pan to make it easier. But if you prefer to avoid foil, I really like this Pyrex glass pan since it comes with a lid and is easy to travel with. Plus, A carrying case is so helpful to keep things hot!

If you are taking them to a party and do not have an insulated carrying case, I’d recommend reheating them for 5-10 minutes at 350 degrees before serving.

How do I make Mississippi Sliders?

I love that this recipe is quite simple, yet so flavorful. Simply brown and season the ground beef, assemble the sliders and bake. I’ve outlined the specifics below:

  • Preheat your oven to 350 degrees.
  • Preheat your stainless steel or cast iron skillet on medium heat.
  • Cook your ground beef until it is no longer pink. Drain any excess grease.
  • While your beef is cooking, cut your rolls in half, laying the bottoms into a greased 13″ x 9″ pan. Grate your cheese and place about half (4 oz.) on top of the bottom rolls.

  • Add in your packet of Au Jus and 3 tablespoons of pepperoncini brine.
  • Allow the seasoned beef simmer for 5 minutes.
  • Remove the seasoned ground beef and place it evenly on top of your sliders.

  • Next, top your ground beef layer with pepperoncinis. You get to measure with your heart on this step! If you’re serving a large crowd or toddlers, you might want to opt for 1-2 per slider. However, if you’re making these for dinner, add according to your preference!
  • Top with remaining cheese and top layer of rolls.
  • Melt one tablespoon of butter and add in your garlic powder, onion powder, and dill weed. Mix until well combined and then pour the mixture over the sliders.

  • Cover your pan with foil and bake at 375 degrees for 15-20 minutes, until the cheese is fully melted and the rolls are nicely golden brown.

How do I store and reheat Mississippi Sliders?

Store leftovers in an airtight container for up to 3 days. Reheat in the oven at 350 for 10-15 minutes or in the microwave until desired temperature (30 second intervals).

  1. French Fries: As Americans, fries are a staple with sandwiches. Either homemade or store-bought!

  3. Roasted Veggies: Our go-to is roasted broccoli! So good and so simple.
  4. Baked Sweet Potato or Sweet Potato Fries: Something about the sweetness from the sweet potato just pairs perfectly with the slight spice from these sliders!
  5. Extra Pepperoncinis: If you have varying spice tolerance in your family, you may want to opt for having less pepperoncinis on the baked sliders and having the option to add extra pepperoncinis to taste for those who enjoy the kick!

Ingredients

  • 12 Hawaiian Rolls store-bought or homemade
  • 1 lb ground beef
  • 1 packet Au Jus Gravy Mix
  • 1 jar pepperoncinis # of pepperoncinis per slider is up to you!
  • 3 tbsp pepperoncini brine from the jar
  • 8 oz high-quality smoked gouda cheese shredded or sliced
  • 1 tbsp butter melted
  • 1/2 tsp dill weed
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder

Instructions

Cooking the Sliders

  • Preheat oven to 350 degrees.
  • Grease a 13×9" baking dish with butter or your favorite cooking spray.
  • Brown 1lb of ground beef in a skillet that has been heated to medium.
  • While your beef is browning, slice your rolls in half and lay the bottom half of the rolls in your greased baking dish.
  • As your beef continues to brown, grate your 8oz. of cheese and put half of it on the top of the rolls in your baking dish. If using slices, cover the bottom half of the rolls with the slices.
  • Once your beef is browned, drain any excess grease. Turn the burner down to medium/low and add in your Au Jus packet and 3 tablespoons of pepperoncini brine. Simmer for about 5 minutes.
  • Top the cheese layer of your sliders with the cooked beef.
  • Top the ground beef with pepperoncinis. Add to your heart's desire — this is where you have creative freedom!
  • Top with remaining cheese.
  • Place the top half of the rolls on top.
  • Melt 1 tablespoon of butter and add in 1/2 tsp of garlic powder, onion powder, and dill weed. Pour over the sliders.
  • Cover the baking dish with foil and bake at 350 degrees for 15-20 mins, until the rolls are slightly browned and the cheese is fully melted.
